Recipe: Individual Meatloaves & Sauce

Ingredients:
1 lb. lean ground beef
1/2 tsp. salt
2/3 cup cracker crumbs (I use seasoned bread crumbs)
2/3 cup milk
1 beaten egg
3 Tbsp. minced onion
1/2 tsp each, dried sage and thyme leaves
1/4 tsp nutmeg
2 Tbsp brown sugar, packed
1/3 cup ketchup or tomato paste
1/2 tsp each ginger and garlic salt, optional
2 Tbsp soy sauce
1 tsp dry mustard
sliced green pepper, optional

Preparation:
1. Preheat oven to 350*. Crumble beef into large bowl. Add salt. Sprinkle with cracker/bread crumbs and milk. Let stand a few minutes until crumbs are soft. Blend together.
2. Mix in egg, onion, sage, thyme, nutmeg and black pepper, mixing well. Shape into 4 loaves. Place on a foil lined baking sheet, about 3 inches apart.
(NOTE: If I am freezing these, I just pop them into a freezer container or Tupperware and stick in freezer.)
3. Mix brown sugar, ketchup, ginger and garlic salt, if used, soy sauce and mustard. Spread mixture over tops of loaves.
4. Bake at 350* for 35 minutes. Sprinkle with green pepper before serving.
